
I love a good dessert, but because of my digestive sensitivities, I can’t indulge in sugary sweets. Sugar makes me feel terrible, bloated, and I’ll spare you the additional details.
For those of us who love sweets, but want to avoid the physical repercussions of what the white stuff does to our bodies, let’s talk about some desserts we can enjoy!
Chocolate… Seriously, is there anyone who doesn’t love this stuff? All of these recipes have only five ingredients. Yes, FIVE ingredients!! I promise, you will love these and so will your kids. You may have to hide in the bathroom when you eat your portion so you don’t have to share… I’m not speaking from experience or anything!
Fudgesicles
1 13 oz can of coconut milk
1/3 cup of baking cocoa
4 Tbsp of maple syrup (or more to taste)
1 tsp of vanilla
pinch of salt (optional)
- Place all of the ingredients in a blender and process on high for about a minute.
- Taste and add more maple syrup if needed.
- Pour into popsicle molds and freeze for about 4 to 5 hours.
Chocolate Coconut Bars
2 cups shredded unsweetened coconut
1 cup coconut oil
1/4 cup raw honey or maple syrup
1/4 tsp salt
3/4 cup dark chocolate chips (60% or higher)
1/2 tsp vanilla (optional)
- Line a 8×8 pan with parchment paper.
- Melt coconut oil in a sauce pan.
- Pour the shredded coconut, honey, vanilla (if using) and salt into melted coconut oil and mix thoroughly.
- Pour the coconut mixture into the pan and place in the freezer for about 15 minutes.
- While the coconut mixture is freezing, melt the chocolate on very low heat in the same sauce pan you used to melt the coconut oil. Stir constantly until smooth. Let the chocolate cool a little
- Spread melted chocolate over frozen coconut mixture and freeze until chocolate has hardened.
- Remove from pan and chop into small squares.
Primal Fudge
1/2 cup coconut oil
1/2 cup high quality cocoa powder
1/2 cup smooth almond butter (or peanut butter)
1/4 raw honey or maple syrup
1/2 tsp vanilla
- Place all ingredients into a blender and process on high for 45 – 60 seconds.
- Taste and adjust sweetness if needed (sometimes I add a 2 or 3 drops of stevia).
- Divide the mixture evening in popsicle molds and freeze for 4 hours before serving.
